I will start my paleo blog with one of my favorite recipes. It is super-easy and quick to make and you can also be creative: My hot-beloved paleo chicken curry in coconut milk! Almost every weekend I make a giant pot – enough for at least 4-6 lunches. That’s also why I find it a bit difficult to give you accurate quantitative information about the ingredients. I mainly cook inuitively anyway. The main thing is to get my protein and plenty of vegetables. And of course it has to be paleo style!

So here’s the list of ingredients:

  • Chicken breast
  • Spices (curry, cayenne pepper, paprika, lemon pepper)
  • Vegetables (Be creative! I like onions, zucchini, broccoli, carrots, bamboo and mushrooms)
  • Coriander, garlic, chili
  • Coconut Milk
  • Olive oil


And here you go with the preparation:

The first step for the tasty paleo chicken curry: I cut the meat into bite-size pieces. Whether into cubes or thin slices doesn’t really matter. Then I make a marinade in a bowl. I mix the olive oil with the spices and the chopped garlic and the chili. The cut meat now goes into the bowl and I mix everything well, so that the meat is well covered with marinade. Now I brown the meat in the hot pan and gradually mix it with the vegetables. The carrots first because they take longest to be done. Followed by mushrooms, zucchini, onions and bamboo. The broccoli is previously blanched in a pot and added last. When the meat is done and the vegetables have the necessary bite, I use one or two cans of coconut milk to pour over. I boil the whole thing again briefly and finally sprinkle chopped coriander. Et voila: paleo chicken curry. Bon appetit!

Hopefully you discover your creative side by cooking this meal. Which vegetables you use is up to you. Be curious and use a variety of vegetables – it should be colorful! How you flavour the meat you can decide for yourself as well. As you might have noticed I like it very spicy. Volume wise I can only say this much: The proportion of vegetables to meat is about 2 to 1. The coconut milk I almost use like a sauce.
